Dry Ingredients
- 2 Cups Plain Flour
- 1 Cup Sugar Substitute
- 1/4 Cup Cocoa Powder
- 1 Tsp Baking Powder
- 1 Tsp Bicarb Soda
Wet Ingredients
- 2 Egg Whites
- 1 Cup Buttermilk
- 1 Cup Pitted Prunes
- 1/3 Cup Olive Oil
- 1 Tsp Vanilla Extract
- 2 Tsp Instant Coffee
- 1/4 Cup Boiling Water

Method
- Beat egg whites until they peak.
- Add buttermilk, olive oil and vanilla extract and continue to beat until mixed through.
- Blend prunes with coffee and boiling water until consistency of a thick paste.
- Sift remaining dry ingredients into the bowl.
- Add wet ingredients to dry and mix through thoroughly.
- Put mixture into an oiled baking tin.
- Bake for 35-40 min in a preheated oven at 180 degrees celsius.
- Ice with home made icing. (Optional)
