Dry Ingredients

  • 2 Cups Plain Flour
  • 1 Cup Sugar Substitute
  • 1/4 Cup Cocoa Powder
  • 1 Tsp Baking Powder
  • 1 Tsp Bicarb Soda

 

Wet Ingredients

  • 2 Egg Whites
  • 1 Cup Buttermilk
  • 1 Cup Pitted Prunes
  • 1/3 Cup Olive Oil
  • 1 Tsp Vanilla Extract
  • 2 Tsp Instant Coffee
  • 1/4 Cup Boiling Water

Method

  • Beat egg whites until they peak.
  • Add buttermilk, olive oil and vanilla extract and continue to beat until mixed through.
  • Blend prunes with coffee and boiling water until consistency of a thick paste.
  • Sift remaining dry ingredients into the bowl.
  • Add wet ingredients to dry and mix through thoroughly.
  • Put mixture into an oiled baking tin.
  • Bake for 35-40 min in a preheated oven at 180 degrees celsius.
  • Ice with home made icing. (Optional)
